It started early
My relationship with caviar began unusually early. I was introduced to it at about four years old and, somehow, it stuck. What began as a precocious favorite became a lifelong fascination with the nuances of caviar: where it comes from, how different species express themselves, the character of each pearl, and how provenance, salinity, texture, and finish can completely transform the experience.
The caviar hunter
Over the years, I became something of an unofficial caviar hunter. From Singapore to Milan and wherever my travels took me, I sought out caviar. I tasted across species, origins, and preparations, learning what makes a beautiful Ossetra distinctly different from Kaluga, why the delicate character of Sevruga deserves its own moment, and how the right pairing can reveal something entirely new in a familiar tin. Caviar became more than one of my favorite foods. It became a subject I loved to study, share, and introduce to others.
The marketer
At the same time, I was building my career in luxury and direct-to-consumer marketing, with experience across LVMH, The Estée Lauder Companies, and Kering. My work centered on a question that would eventually become central to Gourmet Chariot: how do you take something exceptional and create an experience that brings people closer to it?
For all my years enjoying caviar, I felt there was still an unnecessary distance around it. Caviar was exquisite, yes. But it could also be playful, social, surprising, and wonderfully approachable. It didn't have to live exclusively beneath a silver cloche or at the center of a formal dinner. It is the idea I come back to most, and the one Naples Illustrated chose to print:

Then came Hyde Park
One afternoon in London, sitting in Hyde Park, I found myself craving exactly what I wanted: a few beautiful pearls of caviar and a glass of Champagne. I remember thinking, why can't a beautiful little cart simply roll up and serve me that?
No reservation. No white tablecloth. No four-course dinner required. Just exceptional caviar, thoughtfully sourced and beautifully served, wherever the occasion happens to be.
That little cart became Gourmet Chariot. When she first rolled out in Naples, cherry red and dressed in roses, Florida Weekly announced her arrival in a single line:

A few days later WINK News brought its cameras to the window, and gave us a headline I still smile at:

Today
Today, I personally curate a rotating exploration of caviar, alongside a plant-based alternative. Through traditional service, composed bites, side-by-side tastings, and our signature caviar experiences, my goal is to give guests the opportunity I have treasured for years: to taste, compare, ask questions, and discover what they love.
Each season I also create something new in the Chariot kitchen, a bite that exists nowhere else. Food & Beverage Magazine described one of them this way:
